Vanadium occurs in various forms.

The dominant forms in biological materials are vanadium and vanadyl.

Beverages, fats, oils, fresh fruits and vegetables contain low levels of vanadium, while whole grains, seafood, meat and dairy products contain higher amounts (0.005-0.03 mg/kg).

Some foods, including spinach, parsley, mushrooms and oysters, contain relatively high amounts of vanadium (0.10mg/kg).

Vanadium is present in some multivitamin/mineral supplements at levels of about 0.025mg/day.

Although no specific published data have been found, it is possible that vanadium interferes with iron storage and metabolism because absorbed vanadium binds to transferrin.
